Apple Crumble, low GI, high fiber
Looking for a dessert that's low glycemic and high in fiber? Try this one:

Ingredients:
3 large Granny Smith apples, peeled, cored and sliced
1/2 teaspoon mixed spice

Crumble ingredients:
1 cup rolled oats
1/2 cup unprocessed oat bran
1/2 cup brown sugar
1 teaspoon cinnamon
3 tablespoons poly- or mono-unsaturated margarine.

Directions:
1. Combine the apples and spice and place in a 10 inch pie dish.
2. In a food processor, combine the crumble ingredients.
3. Mix to form a crumble and sprinkle over the apples. Bake in a 350 degree oven for 30 minutes.

Makes 4 generous services. The fiber makes it quite filling!

Info per serving:
Calories: 365
Carbs: 60 grams
Fat: 12 grams
Fiber: 7 grams

This sounds delicious! I am always looking for different recipes that are healthy and high in fiber. I have been having issues with my digestive system, so my doctor gave me strict orders to include lots of fiber in my diet. The thing I absolutely love about this is that it is like a template. It is a basic recipe and you can change the fruit for a nice variety. I can't wait to try it! Thanks!
