Whole Wheat Blueberry Pancakes
These are a very tasty pancake recipe, with lots of fiber - Over 4 Grams per serving. It's also a fairly small recipe, so if you are only cooking for a few, it's perfect. Only makes about 10 pancakes.
INGREDIENTS
1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 egg
1-1/4 cup milk
1/2 teaspoon salt
1 tablespoon artificial sweetener
1/2 cup blueberries
DIRECTIONS
Sift flour, then combine with baking powder. Put aside. Beat egg, milk, salt and sweetener in a large bowl. Stir in flour and baking powder mixture. Finally, fold in blueberries.
Use a cooking spray on a skillet, heat. Pour ladle-full scoops of batter into pan to make individual pancakes. When pancakes bubble, flip over. Pancakes should have a nice golden brown color.
Makes about 5 servings. Each serving has roughly 165 calories, 2.6g fat, 46mg cholesterol, 468mg sodium, 26.8g total carbs, 9.7g protein and 4.1g dietary fiber.
